🍋 Lemon-Quark Mousse with Shortbread Base

Ingredients
- 150 g Shortbread cookies
- 75 g Butter
- 500 g Quark (40% fat)
- 100 g Sugar
- 50 ml Lemon juice
- 250 ml Heavy cream
Instructions
- 1. Crush the cookies finely using a rolling pin. Melt the butter in a pot.
- 2. Mix the crumbs with the butter and press the mixture firmly into a springform pan (20 cm). Place it in the refrigerator.
- 3. Whisk quark, sugar, and lemon juice in a large bowl until smooth.
- 4. Whip the heavy cream to stiff peaks.
- 5. Gently fold the cream into the quark mixture. Spread the cream over the base. Place the dessert in the refrigerator for at least 4 hours.
