  1. 1. Pour the milk into a pot and squeeze the lemon zest. Add the peeled lemon zest to the milk and heat the mixture over medium heat without bringing it to a boil.
  2. 2. Whisk the sugar, cornstarch, and cold lemon juice in a separate bowl until smooth with no lumps.
  3. 3. Remove the lemon zest from the milk. Whisk the semolina into the warm milk and simmer while stirring constantly until the mixture thickens.
  4. 4. Pour the diluted starch mixture into the hot grits broth and stir vigorously until everything is fully combined and a creamy consistency is reached.
  5. 5. Remove the pot from the heat and let the porridge cool completely. Cover the surface directly with plastic wrap to prevent a skin from forming.
  6. 6. Remove the plastic wrap and beat the cooled mixture with a hand mixer until fluffy. Fill into ice cream molds in portions and freeze for at least 4 hours.
