🍋 Lemon Grits Auto Ice Cream

Ingredients
- 250 ml Whole milk
- 1 Stk Lemon
- 60 g Semolina
- 70 g Sugar
- 15 g Cornstarch
- 30 ml Lemon juice
Instructions
- 1. Pour the milk into a pot and squeeze the lemon zest. Add the peeled lemon zest to the milk and heat the mixture over medium heat without bringing it to a boil.
- 2. Whisk the sugar, cornstarch, and cold lemon juice in a separate bowl until smooth with no lumps.
- 3. Remove the lemon zest from the milk. Whisk the semolina into the warm milk and simmer while stirring constantly until the mixture thickens.
- 4. Pour the diluted starch mixture into the hot grits broth and stir vigorously until everything is fully combined and a creamy consistency is reached.
- 5. Remove the pot from the heat and let the porridge cool completely. Cover the surface directly with plastic wrap to prevent a skin from forming.
- 6. Remove the plastic wrap and beat the cooled mixture with a hand mixer until fluffy. Fill into ice cream molds in portions and freeze for at least 4 hours.
