🍋 Lime Sponge Cake with Berries

Ingredients
- 3 Stk Eggs (Size M)
- 90 g Sugar
- 90 g Wheat Flour (Type 405)
- 3 g Baking Powder
- 2 Stk Limes
- 250 ml Heavy Cream (30% Fat)
- 150 g Blueberries (Fresh)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced and grease a small springform pan (18 cm diameter).
- 2. Separate the egg yolks from the egg whites.
- 3. Whip the egg whites until stiff peaks form.
- 4. Whisk the egg yolks with the sugar and the grated zest of two limes for approx. 5 minutes until light and creamy.
- 5. Mix the flour with the baking powder and gently fold it into the egg yolk mixture.
- 6. Gently fold the stiffly whipped egg whites into the batter.
- 7. Pour the batter into the pan and bake for approx. 25 minutes until golden brown.
- 8. Let the cake cool completely.
- 9. Whip the heavy cream to whipped cream.
- 10. Layer the cake with the cream and the blueberries.
