  1. 1. Preheat the oven to 180 degrees Celsius fan-forced and grease a small springform pan (18 cm diameter).
  2. 2. Separate the egg yolks from the egg whites.
  3. 3. Whip the egg whites until stiff peaks form.
  4. 4. Whisk the egg yolks with the sugar and the grated zest of two limes for approx. 5 minutes until light and creamy.
  5. 5. Mix the flour with the baking powder and gently fold it into the egg yolk mixture.
  6. 6. Gently fold the stiffly whipped egg whites into the batter.
  7. 7. Pour the batter into the pan and bake for approx. 25 minutes until golden brown.
  8. 8. Let the cake cool completely.
  9. 9. Whip the heavy cream to whipped cream.
  10. 10. Layer the cake with the cream and the blueberries.
