  1. 1. Mix the flour with 1 pinch of salt in a large bowl.
  2. 2. Add the eggs and beat them briefly with a whisk.
  3. 3. Pour in half of the milk while stirring.
  4. 4. Stir in the remaining milk and melted butter until no lumps remain.
  5. 5. Let the batter rest for 15 minutes.
  6. 6. Grate the zest of the orange and the lemon (only the colored skin).
  7. 7. Squeeze the juice of the orange and mix it into the crêpes.
  8. 8. Preheat a non-stick pan over medium heat and add a ladle of batter.
  9. 9. Fry the crêpe for approx. 1-2 minutes per side until golden brown.
  10. 10. Fill the crêpe with powdered sugar, ground almonds, and lemon juice.
  11. 11. Fold the crêpe into a quarter and serve warm.
