1. Halve the onions and peel off the outer skin. Finely chop the onion pieces. Cut the lemon in half and squeeze out the juice.
2. Heat oil in a pot over high heat. Add the chopped onions and sauté them for about 3 minutes. Pour the sour cherries into a sieve to catch the liquid. Add the cherries and 200 milliliters of the collected liquid to the onions in the pot. Mash the cherries into a pulp using a potato masher. Remove any pits if present. Cook the mixture for about 5 minutes over high heat.
3. Add the rum and ketchup to the sauce and stir everything well. Let the sauce simmer gently over medium heat for about 5 minutes. Season with salt, pepper, the freshly squeezed lemon juice, and beet syrup to taste. Fill the hot sauce into screw-top jars and seal them tightly. Turn the jars upside down to allow them to cool completely.
4. Now serve the cherry BBQ sauce. Enjoy your meal! Tip: This sauce tastes great with grilled meat, burgers, and vegetables.
