🍽️ Crispy Mediterranean Vegetables from the Air Fryer

Ingredients
- 1 piece zucchini
- 1 piece bell pepper
- 1 piece bell pepper
- 1 piece eggplant
- 1 piece onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp thyme
- 1 tsp paprika powder
- salt and pepper to taste
- fresh basil
Instructions
- 1. Wash the zucchini, the bell pepper, the eggplant, and the onions.
- 2. Cut the vegetables into bite-sized cubes.
- 3. Finely chop the garlic.
- 4. Take a large bowl.
- 5. Pour olive oil into the bowl.
- 6. Add oregano to the bowl.
- 7. Add thyme to the bowl.
- 8. Add paprika powder to the bowl.
- 9. Salt the marinade to taste.
- 10. Pepper the marinade to taste.
- 11. Stir the marinade ingredients well with a spoon.
- 12. Put the cut vegetable pieces into the bowl with the marinade.
- 13. Add the chopped garlic to the bowl.
- 14. Toss the vegetables until they are evenly coated with the marinade.
- 15. Preheat the air fryer to 180 °C.
- 16. Put the marinated vegetables into the basket of the air fryer.
- 17. Cook the vegetables at 180 °C for 18 minutes.
- 18. Shake the basket once to make the vegetables evenly crispy.
- 19. Cook the vegetables at 180 °C for another 2 minutes.
- 20. Take the finished vegetables out of the air fryer.
- 21. Chop fresh basil leaves.
- 22. Sprinkle the basil over the vegetables.
- 23. Serve the vegetables immediately.
