  3. 3. Rub the fillets with salt, pepper, and a little lemon juice.
  4. 4. Sprinkle oregano over the top if desired to create a Mediterranean aroma.
  5. 5. Halve half of the cherry tomatoes.
  6. 6. Slice the onion into thin strips.
  7. 7. Finely chop the garlic.
  8. 8. Place the tomatoes, onions, and garlic in a bowl.
  9. 9. Mix the vegetables with olive oil, oregano, salt, and pepper.
  10. 10. Place the salmon fillets in the basket of the air fryer.
  11. 11. Distribute the tomato mixture evenly around the fish.
  12. 12. Ensure the vegetable mixture does not sit directly on the fillets so the skin stays crispy.
  13. 13. Preheat the air fryer to 180 °C and cook the salmon for 12 minutes.
  14. 14. Check if the salmon is cooked through but still juicy and easily flakes with a fork.
  15. 15. Let the fillets rest for 2 to 3 minutes after cooking.
