🍽️ Mediterranean Airfryer Salmon with Cherry Tomatoes

Ingredients
- 2 pcs salmon fillets
- 200 g cherry tomatoes
- 1 pcs red onion
- 2 pcs garlic cloves
- 1 tsp dried oregano
- 1 tsp fresh lemon juice
- 2 tbsp olive oil
- salt and freshly ground pepper
- Optional a few black olives, fresh basil
Instructions
- 1. Rinse the salmon fillets under cold water.
- 2. Pat the fish completely dry with kitchen paper.
- 3. Rub the fillets with salt, pepper, and a little lemon juice.
- 4. Sprinkle oregano over the top if desired to create a Mediterranean aroma.
- 5. Halve half of the cherry tomatoes.
- 6. Slice the onion into thin strips.
- 7. Finely chop the garlic.
- 8. Place the tomatoes, onions, and garlic in a bowl.
- 9. Mix the vegetables with olive oil, oregano, salt, and pepper.
- 10. Place the salmon fillets in the basket of the air fryer.
- 11. Distribute the tomato mixture evenly around the fish.
- 12. Ensure the vegetable mixture does not sit directly on the fillets so the skin stays crispy.
- 13. Preheat the air fryer to 180 °C and cook the salmon for 12 minutes.
- 14. Check if the salmon is cooked through but still juicy and easily flakes with a fork.
- 15. Let the fillets rest for 2 to 3 minutes after cooking.
- 16. Garnish the dish with fresh basil leaves or olives as desired.
