🍽️ Crispy Oven Vegetables with Potatoes from the Air Fryer

Ingredients
- 300 g potatoes
- 1 piece zucchini
- 1 piece bell pepper
- 1 piece carrot
- 1 piece onion
- 2 tbsp olive oil
- 1 tsp paprika powder
- ½ tsp garlic powder
- ½ tsp dried herbs
- salt & pepper to taste
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Cut the potatoes into bite-sized cubes or wedges.
- 3. Leave the skin on the potatoes if you prefer.
- 4. Cut the zucchini into pieces of equal size.
- 5. Cut the bell pepper into pieces of equal size.
- 6. Cut the carrots into pieces of equal size.
- 7. Peel the red onion.
- 8. Cut the red onion into wedges.
- 9. Place all the cut vegetables into a large bowl.
- 10. Add olive oil to the vegetables.
- 11. Add paprika powder to the vegetables.
- 12. Add garlic powder to the vegetables.
- 13. Add your chosen herbs to the vegetables.
- 14. Salt the vegetables to taste.
- 15. Pepper the vegetables to taste.
- 16. Mix everything well until the oil is evenly distributed.

- 18. Preheat the air fryer to 190 °C.
- 19. Place the seasoned vegetables into the air fryer basket.
- 20. Make sure the vegetables are not piled too high on top of each other.
- 21. Cook the vegetables at 190 °C for 20 minutes.
- 22. Shake the basket after 10 minutes.
- 23. Stir the vegetables with a spoon after 10 minutes.
- 24. Remove the vegetables from the air fryer when they are golden brown and crispy.
- 25. Optionally garnish the vegetables with fresh herbs.
- 26. Optionally garnish the vegetables with a little lemon juice.
- 27. Enjoy the dish immediately.
- 28. Serve it as a side dish or with a dip as a main course.
