  1. 1. Take the tofu out of the package and wrap it in kitchen paper.
  2. 2. Place a heavy object, such as a pot, on top of the tofu.
  3. 3. Let the tofu sit under the weight for 10 minutes to let the excess liquid escape.
  4. 4. Whisk soy sauce, sesame oil, maple syrup, and rice vinegar together in a bowl.
  5. 5. Cut the tofu into cubes of about 2 cm in size.
  6. 6. Add the tofu cubes to the marinade and turn them gently to ensure they are well coated.
  7. 7. Let the tofu cubes marinate for 5 to 10 minutes.
  8. 8. Mix cornstarch, paprika powder, and a pinch of salt in a separate bowl.
  9. 9. Roll each tofu cube individually in the starch mixture until it is covered all over.
  10. 10. Place the breaded tofu cubes in the air fryer basket so that they do not touch each other.
  11. 11. Lightly spray or brush the tofu cubes with oil.
  12. 12. Preheat the air fryer to 200 °C and cook the tofu for 13 to 15 minutes.
  13. 13. Shake the basket gently halfway through the cooking time to ensure the tofu becomes evenly crispy.
  14. 14. While the tofu is cooking, whisk all the ingredients for the dip together in a small bowl.
  15. 15. Thin the dip with warm water as needed until you reach the desired consistency.
  16. 16. Serve the crispy tofu with the peanut dip.
  17. 17. Optionally garnish the dish with spring onions, sesame seeds, or cilantro.
