🍽️ Crispy Chickpea Falafel with Fresh Mint Yogurt

Ingredients
- 200 g chickpeas
- 1 piece onion, finely chopped
- 2 pieces garlic cloves
- 1 bunch fresh parsley
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp baking powder
- 3 tbsp flour
- salt and pepper to taste
- 1 tbsp olive oil
- 150 g yogurt
- 1 tbsp lemon juice
- 1 handful fresh mint leaves, finely chopped
- salt and pepper to taste
Instructions
- 1. Open the can of chickpeas and drain the liquid.
- 2. Pat the chickpeas dry with a kitchen towel.
- 3. Place the chickpeas, onion, garlic, parsley, cumin, and coriander into a food processor.
- 4. Blend the ingredients until you have a coarse mixture.
- 5. Add baking powder and flour to the bowl.
- 6. Mix everything thoroughly.
- 7. Season the mixture with salt and pepper.
- 8. Shape small balls from the mixture (about the size of a walnut).
- 9. Let the balls rest for 10 minutes to firm up.
- 10. Lightly brush the falafel balls with olive oil.
- 11. Place the falafel into the air fryer.
- 12. Preheat the air fryer to 180 °C and cook the falafel for 12 to 15 minutes.
- 13. Turn the balls halfway through cooking time so they brown evenly.
- 14. Whisk yogurt, lemon juice, mint, salt, and pepper in a small bowl.
- 15. Serve the hot falafel with the mint yogurt dip.
