  1. 1. Peel the potatoes and grate them finely.
  2. 2. Place the grated potatoes in a clean kitchen towel.
  3. 3. Squeeze the potatoes tightly in the towel to remove as much liquid as possible.
  4. 4. Also grate the onion finely.
  5. 5. Add the grated onions to the squeezed potatoes in a large bowl.
  6. 6. Add the egg, the flour, the salt, and the grated nutmeg to the potato-onion mixture.
  7. 7. Mix all ingredients thoroughly with a spoon until a uniform mass forms.
  8. 8. Form small, flat pancakes from the mixture.
  9. 9. Ensure the pancakes have an even thickness so they cook evenly.
  10. 10. Brush the basket of the air fryer lightly with oil.
  11. 11. Place the pancakes side by side in the prepared basket.
  12. 12. Preheat the air fryer to 180 °C and place the pancakes inside for 10 minutes.
  13. 13. Carefully turn the pancakes after the first half of the cooking time.
  14. 14. Cook the pancakes at 180 °C for another 10 minutes until they are golden brown and crispy.
  15. 15. Serve the finished potato pancakes hot.
  16. 16. Garnish them as desired with apple sauce, herb quark, or a fresh salad.
