🍽️ Crispy Zucchini Boats with Meat Filling from the Air Fryer

Ingredients
- 2 piece zucchini
- 200 g ground beef
- 1 piece onion
- 1 piece garlic clove
- 1 tbsp tomato paste
- 1 tsp paprika powder
- 1 tsp dried oregano
- 50 g grated cheese
- 1 tsp olive oil
- salt and pepper to taste
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Cut each zucchini in half lengthwise.
- 3. Carefully scoop out the inside of the zucchini halves with a spoon.
- 4. Leave a border of about half a centimeter so the shell stays sturdy.
- 5. Roughly chop the removed zucchini flesh.
- 6. Set the chopped vegetable aside.
- 7. Finely chop the onion.
- 8. Finely chop the garlic clove.
- 9. Heat the olive oil in a pan.
- 10. Sauté the onions and garlic briefly.
- 11. Add the minced meat to the pan.
- 12. Cook the meat until it is crumbly.
- 13. Stir the tomato paste into the meat mixture.
- 14. Add the previously chopped zucchini flesh.
- 15. Season the filling with paprika powder.
- 16. Add oregano.
- 17. Salt the mixture to taste.
- 18. Pepper the mixture to taste.
- 19. Let the filling simmer for about three to five minutes over medium heat.
- 20. Stir occasionally until the mixture looks thick and creamy.
- 21. Place the empty zucchini halves in the basket of the air fryer.
- 22. Fill each zucchini with the meat mixture.
- 23. Sprinkle cheese over the filling.
- 24. Preheat the air fryer to 180 °C.
- 25. Cook the stuffed zucchini at 180 °C for 12 to 15 minutes.
- 26. Remove the zucchini when the cheese is golden brown.
- 27. Check that the zucchini is soft but not mushy.
- 28. Let the zucchini cool for two minutes before serving.
- 29. This allows the filling to absorb the flavors even more.
