  1. 1. Clean the mushrooms with a kitchen towel. Do not wash them to prevent water absorption. Cut off the tough stem ends. Keep small mushrooms whole. Halve large mushrooms.
  2. 2. Place the flour in one bowl. Whisk the egg in a second bowl. Mix the whole grain breadcrumbs with salt, pepper, and paprika powder in a third bowl. Place all bowls side by side for a quick workflow.
  3. 3. Coat each mushroom first in the flour. Then dip it into the egg. Finally, roll it in the seasoned breadcrumbs. Press the coating firmly onto the mushroom. Place the breaded mushrooms on a plate.
  4. 4. Preheat the air fryer to 200 °C. This ensures a crispy coating.
  5. 5. Place the mushrooms individually in the fryer basket. Avoid overlapping. Work in two batches if space is limited. Lightly spray the mushrooms with oil to help them brown.
  6. 6. Cook the mushrooms for 15 minutes at 180 °C. Turn them after 7.5 minutes or shake the basket. This ensures they become crispy all over.
  7. 7. Serve the mushrooms hot. Herb quark, yogurt dip, or garlic mayonnaise pair perfectly with them.
