  1. 1. Wash the broccoli and remove the tough stems.
  2. 2. Pulverize the broccoli in a food processor or with a sharp knife until it is very fine.
  3. 3. Make sure the broccoli pieces are almost as small as rice grains.
  4. 4. Place the chopped broccoli into a large mixing bowl.
  5. 5. Add an egg, grated cheese, almond flour, mustard, ground nutmeg, salt, and pepper.
  6. 6. Mix all ingredients with a spoon or your hands until a homogeneous mass forms.
  7. 7. Take small portions of the mixture and shape them into 4 to 6 flat patties.
  8. 8. Press the patties slightly flat.
  9. 9. If the mixture is too wet to shape, stir in a little more almond flour.
  10. 10. Place a piece of baking paper in the basket of the air fryer.
  11. 11. Secure the patties on the baking paper so they do not fly out.
  12. 12. Preheat the air fryer to 200 °C.
  13. 13. Place the patties in the air fryer.
  14. 14. Cook the patties at 200 °C for 6 minutes.
  15. 15. Carefully turn the patties with a fork or tongs.
  16. 16. Cook the patties at 200 °C for another 6 minutes.
  17. 17. Check if the patties are golden brown and slightly crispy.
  18. 18. Remove the patties from the air fryer.
  19. 19. Let the patties cool on a plate for 5 minutes.
  20. 20. Wait until they are more stable before handling them.
