Ingredients

Instructions

  1. 1. Choose firm-cooking potatoes (e.g., Linda or Nicola) as they hold their shape and become crispy on the outside. Wash the potatoes thoroughly and peel them if desired. Slice them into even pieces about 3 to 5 millimeters thick. Place the slices in a bowl of cold water for 15 to 20 minutes. This step removes excess starch and ensures crispiness later.
  2. 2. Drain the water and pat the potato slices very dry with a kitchen towel or paper towels. The drier the potatoes, the better they roast in the air fryer. Moisture prevents crispiness, so ensure a dry start here.
  3. 3. Place the dry potato slices in a large bowl. Drizzle the oil over them and add paprika powder, salt, and pepper. Optionally add a pinch of caraway seeds for authentic flavor. Mix everything thoroughly by hand until every slice is evenly coated with oil and spices.
  4. 4. Spread the seasoned potato slices evenly in the air fryer basket. Do not overcrowd the basket; slices may slightly overlap but should not be stacked. For small appliances (up to 3 liters), work in two batches if necessary. Preheat the air fryer to 190 °C and cook the potatoes for 10 minutes. Shake the basket vigorously after 5 minutes for even browning.
  5. 5. After the first 10 minutes, sprinkle the bacon cubes and onion strips over the partially cooked potatoes. Mix everything gently. Cook the mixture for another 10 minutes at 190 °C. Shake the basket again after another 5 minutes so the bacon becomes evenly crispy.
  6. 6. Note that small appliances (under 3 liters) often finish faster; reduce the time in the second phase by 1 to 2 minutes if necessary. Spread ingredients generously in large air fryers (over 5 liters). If your device lacks a preheat function, add about 1 minute to the total time.
  7. 7. After 20 minutes total time, the potatoes should be golden brown and crispy, the bacon crisp, and the onions slightly caramelized. Check the texture and add 2 to 3 extra minutes if needed.
  8. 8. Transfer the finished fried potatoes to a bowl. Optionally sprinkle with freshly chopped parsley. Serve immediately as they taste best when hot and crispy. They pair perfectly with a fried egg, a fresh salad, or herb quark.
