  1. 1. Rinse the eggplant thoroughly under running water.
  2. 2. Slice the eggplant into rounds about 1 cm thick.
  3. 3. Place the slices on kitchen paper.
  4. 4. Lightly sprinkle the slices with salt.
  5. 5. Let the salted slices sit for 5 minutes to release moisture.
  6. 6. Pat the eggplant slices dry with a cloth or paper towel.
  7. 7. Put breadcrumbs, oregano, garlic powder, salt, and pepper into a bowl.
  8. 8. Add vegan parmesan to the breadcrumb mixture if desired.
  9. 9. Mix all the breading ingredients well together.
  10. 10. Brush both sides of the eggplant slices with some olive oil.
  11. 11. Coat each slice in the breadcrumb mixture until covered on all sides.
  12. 12. Press the breading on lightly to ensure it sticks well.
  13. 13. Preheat the air fryer to 200 °C.
  14. 14. Place the breaded slices side by side in the basket.
  15. 15. Make sure the slices do not overlap.
  16. 16. Cook the eggplants at 200 °C for 15 minutes.
  17. 17. Turn the slices once halfway through the cooking time (after 7.5 minutes).
  18. 18. Let the finished slices cool down briefly.
  19. 19. Serve the eggplants hot with your favorite dip.
