🍽️ Crispy Cheese Potatoes from the Air Fryer

Ingredients
- 6 potatoes (large)
- 1 tbsp olive oil
- 200 g sour cream
- 100 g grated cheese
- ½ bell pepper
- 50 g bacon
- 1 scallion
- salt
- pepper
Instructions
- 1. Rinse the potatoes under running water and then pat them completely dry with a kitchen towel.
- 2. Coat the dry potatoes evenly with olive oil.
- 3. Place the oiled potatoes into the basket of your air fryer.
- 4. Preheat the air fryer to 180 °C and bake the potatoes for 35 minutes on the Airfry setting.
- 5. Thoroughly wash the spring onions and the bell pepper.
- 6. Slice the spring onions into thin rings and dice the bell pepper into small cubes.
- 7. Remove the potatoes from the air fryer and cut them in half lengthwise.
- 8. Place the potato halves in the basket with the cut side facing up.
- 9. Remove three of the potato halves from the basket and set them aside.
- 10. Bake the remaining potato halves for another 5 minutes at 180 °C.
- 11. Mash the three set-aside potatoes into a puree using a fork.
- 12. Mix the potato mash with sour cream, bacon, the diced bell pepper, the spring onion rings, and the cheese to create a filling.
- 13. Fill the slightly pre-baked potato halves with the cheese-potato mixture.
- 14. Return the filled potatoes to the air fryer for 10 minutes at 180 °C until the cheese is melted and golden brown.
