🍽️ Crispy Red Lentil Patties

Ingredients
- 150 g red lentils
- 280 ml vegetable broth
- 1 red onion
- ½ bell pepper (red)
- 70 g carrots
- parsley (4 sprigs flat-leaf parsley)
- 40 g ground almonds
- salt
- 1 tbsp rapeseed oil
- 1 tbsp flaxseeds
- 1 tsp paprika powder (sweet)
- 1 tsp turmeric (ground powder)
- 1 tbsp spelt flour (heaped)

Instructions
- 1. Place the red lentils in a fine mesh sieve. Rinse them under cold running water. Put the lentils and the broth into a pot. Bring the mixture to a boil. Reduce the heat to medium. Simmer the lentils for 10 to 12 minutes. Stir occasionally. Cook until almost all the liquid has been absorbed.
- 2. Peel the red onion. Dice it very finely. Clean the bell pepper. Dice the bell pepper finely as well. Cut off the ends of the carrot. Peel the carrot. Grate the carrot finely. Wash the parsley. Shake it dry. Pluck off the leaves. Chop the parsley finely.
- 3. Put the ground almonds into a large non-stick pan. Toast the almonds. Wait until they smell slightly fragrant. Wait until they turn golden brown. Remove the almonds from the pan. Season them with a pinch of salt.
- 4. Place the cooked lentils into a fine mesh sieve. Let the lentils drain.
- 5. Add 1 tbsp of oil to the used pan. Heat the oil. Sauté the onion and the bell pepper in it for 2 to 3 minutes. Grind the flaxseeds finely in a stand mixer. Remove the pan from the heat as soon as the vegetables are done.
- 6. Press the lentils again with a tablespoon. Fill the lentils into a medium-sized bowl. Add the paprika powder. Add the turmeric. Add the flour. Add the toasted almonds. Add the ground flaxseeds. Add the grated carrot. Add the sautéed vegetables. Add the chopped parsley.
- 7. Mix everything with a tablespoon. Stir until everything is evenly distributed. Season the lentil mixture with salt. Season the lentil mixture with pepper.
- 8. Shape 10 to 12 lentil patties from the mixture. Press the mixture firmly together. Press the patties slightly flatter. This ensures stability when frying. A patty should weigh between 40 and 50 grams.
- 9. Wipe the used pan with a kitchen paper. Heat some oil in the pan. Fry the lentil patties in batches. Fry at medium heat. Fry each side for 2 to 3 minutes until golden brown. Turn the patties carefully. Turn them only after the time has passed.
- 10. Serve the lentil patties with a dip or fresh salad. Alternatively, you can use the air fryer. Brush the patties with oil beforehand. Bake them at 200 °C for 10 to 12 minutes in the air fryer. Bake them until golden brown.
