  2. 2. Cut the potatoes into thick sticks or wedges.
  3. 3. Rinse the cut potatoes again with cold water to remove excess starch.
  4. 4. Pat the potatoes completely dry with a kitchen towel or paper towels.
  5. 5. Preheat the air fryer for 5 minutes at 170 °C.
  6. 6. Place the dry potato sticks into a large bowl.
  7. 7. Add the olive oil, grated Parmesan, salt, and pepper.
  8. 8. Toss everything well until all potatoes are evenly coated with the mixture.
  9. 9. Place the seasoned potatoes into the air fryer basket.
  10. 10. Cook the potatoes for 10 minutes at 170 °C.
  11. 11. Shake the basket vigorously or stir the potatoes with tongs to ensure even cooking.
  12. 12. Increase the temperature to 180 °C and cook the potatoes for a further 15 minutes until crispy.
