🍽️ Crispy Pumpkin Strips from the Air Fryer with Feta Dip

Ingredients
- 1 kg Hokkaido pumpkin
- 4 tbsp olive oil
- 1 pinch pepper
- ½ tsp salt
- 1 tsp paprika powder (mild sweet)
- 1 red onion
- 1 garlic clove
- 150 g feta
- 2 tbsp parsley (chopped)
- 250 g low-fat quark
- 3 tbsp olive oil
- ½ tsp salt
- 1 pinch pepper
Instructions
- 1. Rinse the pumpkin thoroughly under running water.
- 2. Cut the pumpkin in half and remove the inside with the seeds.
- 3. Cut the pumpkin flesh into narrow, even strips.
- 4. Mix the olive oil with salt, pepper, and paprika powder in a small bowl.
- 5. Coat the pumpkin strips on both sides with the spice mixture.
- 6. Place the pumpkin strips in batches into the basket of the air fryer.
- 7. Preheat the air fryer to 180 °C and cook the pumpkin for 13 minutes until crispy.
- 8. Peel the onion and garlic while the pumpkin is cooking.
- 9. Dice the onion and garlic into very small cubes.
- 10. Crumble the feta cheese into a separate bowl.
- 11. Add the remaining ingredients for the dip to the feta and mix everything well.
- 12. Finally, season the dip to taste with salt and pepper.
