🍰 Small Lemon Yogurt Loaf Cake – Airfryer & Oven Recipe

Ingredients
- 80 g plain yogurt
- 100 g sugar
- 2 eggs
- 80 ml oil
- 1 lemon (organic with untreated peel)
- 150 g wheat flour
- 1 tsp baking powder
Instructions
- 1. Beat the eggs, sugar, and yogurt until creamy using a mixer or whisk.
- 2. Squeeze the juice from the lemon and finely grate the zest.
- 3. Add the lemon juice, lemon zest, and oil to the egg-yogurt mixture.
- 4. Mix the flour and baking powder together in a separate bowl.
- 5. Gently fold the flour mixture into the wet ingredients until a smooth batter forms.
- 6. Grease a 20 cm (8 inch) loaf pan with some fat and lightly dust it with flour.
- 7. Pour the finished batter into the prepared pan.
- 8. Preheat the air fryer to 160 °C and bake the cake in it for 35 minutes until crispy.
- 9. Alternatively: Preheat the conventional oven to 180 °C (top and bottom heat) and bake the cake for 40 minutes.
