  1. 1. Carefully separate the eggs. Put the egg yolks in one bowl and the egg whites in another.
  2. 2. Beat the egg whites with the sugar using a mixer or whisk until they are firm and stiff.
  3. 3. Whisk the egg yolks in the other bowl with the milk, melted butter, flour, and vanilla sugar until you have a smooth batter.
  4. 4. Gently fold the raisins into the egg yolk batter.
  5. 5. Gently fold the stiffly beaten egg whites into the batter until evenly distributed.
  6. 6. Grease a small ovenproof baking dish or pan with a little butter.
  7. 7. Pour the batter into the prepared dish.
  8. 8. Preheat the air fryer to 180 °C and place the dish inside. Bake the Schmarrn for 18 minutes.
  9. 9. Remove the dish from the air fryer. Shred the baked dough into small, irregular pieces using two forks.
  10. 10. Sprinkle powdered sugar or chopped almonds over the shredded pieces.
  11. 11. Place the dish back into the air fryer. Bake the Schmarrn for another 3 minutes at 170 °C until slightly crispy.
