🍽️ Crispy Honey-Mustard Potato Salad from the Air Fryer

Ingredients
- 650 g Drillinge (small potatoes)
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp mustard
- 1 clove garlic
- 1 tsp salt
- 75 g lamb's lettuce
- 100 g cherry tomatoes
- 100 g feta
- 40 ml olive oil
- 1 tbsp mustard
- 1 tbsp white balsamic vinegar
- 1 tbsp honey
- ½ tsp salt
Instructions
- 1. Wash the potatoes thoroughly and cut them into coarse cubes.
- 2. Finely crush one clove of garlic.
- 3. Whisk the olive oil with the honey, mustard, crushed garlic, and a pinch of salt in a bowl.
- 4. Add the potato cubes to the marinade and mix until they are evenly coated.
- 5. Preheat the air fryer to 180 °C.
- 6. Place the marinated potatoes into the air fryer basket.
- 7. Roast the potatoes for 20 minutes at 180 °C until crispy.
- 8. Shake the basket once during cooking to ensure even browning.
- 9. Wash the corn salad and tomatoes under cold water.
- 10. Halve the tomatoes and cut the feta into small cubes.
- 11. Whisk the olive oil with mustard, balsamic vinegar, honey, and salt to make the dressing.
- 12. Add the corn salad, roasted potatoes, tomatoes, and feta to a large bowl.
- 13. Pour the dressing over the ingredients.
- 14. Grind some fresh coarse pepper over the top.
- 15. Toss everything well until the ingredients are evenly coated with the dressing.
- 16. Serve the salad while still warm.
