  1. 1. Thoroughly wash the peppers, broccoli, and zucchini under running water.
  2. 2. Peel the carrot and the onion.
  3. 3. Cut the peppers, broccoli, zucchini, carrot, and onion into small, uniform pieces.
  4. 4. Clean the mushrooms and cut them in half.
  5. 5. Add the olive oil, salt, and Italian herbs to a large bowl.
  6. 6. Press the garlic clove directly into the bowl.
  7. 7. Add the prepared vegetables to the bowl.
  8. 8. Mix the vegetables well so they are evenly coated with the marinade.
  9. 9. Preheat the air fryer to 190 °C.
  10. 10. Place the marinated vegetables into the air fryer basket.
  11. 11. Cook the vegetables for 12 to 15 minutes at 190 °C.
  12. 12. Shake the basket vigorously halfway through the cooking time (after approx. 6 to 7.5 minutes) to ensure even cooking.
