🍽️ Crispy Protein Bread from the Air Fryer

Ingredients
- 100 g spelt flour
- ½ packet baking powder
- 250 g low-fat quark
- 30 g psyllium husks
- 2 eggs
- 1 tbsp apple cider vinegar
- ½ tsp salt
Instructions
- 1. Whisk the eggs in a large bowl.
- 2. Add the skimmed quark, psyllium husks, apple cider vinegar, and salt.
- 3. Stir everything well until a uniform mixture forms.
- 4. Let the mixture rest for ten minutes so that the psyllium husks can swell.
- 5. Mix the flour with the baking powder in a small container.
- 6. Add the flour mixture to the egg-quark mixture.
- 7. Knead the dough with your hands or a spoon until it is firm and homogeneous.
- 8. Preheat the air fryer to 160 °C.
- 9. Brush the cooking basket of the air fryer thinly with rapeseed oil.
- 10. Shape the dough into a loaf and place it in the prepared basket.
- 11. Bake the bread for 30 minutes at 160 °C.
- 12. Turn the loaf once halfway through the baking time.
- 13. Let the bread cool down briefly before slicing it.
