🍋 Warm Lemon Chia Pudding

Ingredients
- 40 g Chia seeds
- 200 ml Coconut milk (can)
- 2 EL Lemon (juice)
- 20 g Maple syrup
- 1/2 TL Vanilla extract
- 20 g White chocolate (coarse shavings)
- 10 g Almond flakes
Instructions
- 1. Whisk the coconut milk, lemon juice, maple syrup, and vanilla extract in a saucepan.
- 2. Stir in the chia seeds. Place the saucepan over medium heat.
- 3. Stir continuously until the mixture warms to approx. 60 degrees Celsius and the chia seeds begin to swell (it will not gel like cold pudding).
- 4. Remove the saucepan from the heat. Distribute the warm pudding into four small glasses or bowls.
- 5. Sprinkle each pudding with the white chocolate shavings and almond flakes.
- 6. Enjoy the pudding immediately while it is still warm.
