  1. 1. Whisk the coconut milk, lemon juice, maple syrup, and vanilla extract in a saucepan.
  2. 2. Stir in the chia seeds. Place the saucepan over medium heat.
  3. 3. Stir continuously until the mixture warms to approx. 60 degrees Celsius and the chia seeds begin to swell (it will not gel like cold pudding).
  4. 4. Remove the saucepan from the heat. Distribute the warm pudding into four small glasses or bowls.
  5. 5. Sprinkle each pudding with the white chocolate shavings and almond flakes.
  6. 6. Enjoy the pudding immediately while it is still warm.
