1. Sift flour, baking powder, and salt into a large mixing bowl. Grate a little fresh nutmeg directly into the dry mixture.
2. Finely chop the walnuts using a food processor or a large knife, and add them to the flour mixture.
3. Peel the bananas, cut them into small pieces, and place them in a bowl. Puree them with a hand blender or mash them thoroughly with a fork.
4. Slice the vanilla pod lengthwise, scrape out the seeds, and stir them into the banana puree.
5. Wash, grate, and beat the apple with butter and coconut blossom sugar using a hand mixer until fluffy. Stir in the egg. Then, gradually add the banana puree and flour mixture alternately to the butter mixture, mixing gently.
6. Grease a small loaf pan (approx. 8x22 cm) if it is not non-stick. Pour in the batter and smooth the top with a rubber spatula.
7. Bake the bread in the preheated oven at 175 °C (convection: 150 °C, gas: setting 2) on the middle rack for 50 to 60 minutes. Insert a wooden skewer into the center: if it comes out clean, the bread is done; otherwise, bake it a few minutes longer.
8. Remove the finished bread from the oven and let it cool in the pan for 5 minutes. Then carefully turn it out of the pan.
