🍛 Vietnamese Vegetable Curry (Cà Ri Rau)

Ingredients
- 400ml Coconut milk
- 2 Carrots
- 150g Broccoli
- 1 Bell pepper
- 1 zucchini
- 2 EL Curry paste
Instructions
- 1. Cut vegetables into even pieces.
- 2. Sauté curry paste briefly in a pot.
- 3. Add coconut milk and bring to a boil.
- 4. Add vegetables and simmer for 15-20 minutes.
- 5. Serve with rice or bread.
