🍛 Vietnamese Vegetable Curry (Cà Ri Rau)

Ingredients
- 400ml Coconut milk
- 200g Potatoes, diced
- 150g Cauliflower, in florets
- 100g Carrots, sliced
- 1 Onion, chopped
- 2 EL Curry powder
Instructions
- 1. Heat oil in a large pot and sauté onions.
- 2. Stir in curry powder and sauté briefly.
- 3. Add potatoes, cauliflower, and carrots, then pour in coconut milk.
- 4. Bring to a boil and simmer for 20 minutes until vegetables are tender.
- 5. Serve with rice.
