🍛 Vietnamese Pumpkin Curry

Ingredients
- 300g Pumpkin
- 400ml Coconut milk
- 150g Green beans
- 1 Onion
- 2 EL Curry paste
- 1/2 Bund Coriander
Instructions
- 1. Peel and cube the pumpkin.
- 2. Dice onion and sauté in a pot.
- 3. Add curry paste and sauté for 2 minutes.
- 4. Add pumpkin and green beans to the pot.
- 5. Add coconut milk and bring to a boil.
- 6. Reduce heat and simmer for 15 minutes.
