🍛 Vietnamese Pork Curry (Cà Ri Heo)

Ingredients
- 300g Pork tenderloin
- 400ml Coconut milk
- 1 Onion
- 2 Carrots
- 2 EL Curry paste
- 10g Basil
Instructions
- 1. Cut pork into cubes and sauté.
- 2. Add onion and sauté for a few minutes.
- 3. Stir in curry paste and sauté for one minute.
- 4. Peel and slice carrots, add to the pot. Stir in coconut milk.
- 5. Bring to a boil and simmer for 30 minutes until meat is tender.
- 6. Serve garnished with fresh basil.
