🍛 Vietnamese Lentil Curry

Ingredients
- 200g Lentils
- 400ml Coconut milk
- 1 Carrots
- 1 Onion
- 2 EL Curry paste
- 100g Spinach
Instructions
- 1. Rinse lentils and drain.
- 2. Dice onion and sauté in a pot.
- 3. Add curry paste and sauté for 2 minutes.
- 4. Add lentils and diced carrots to the pot.
- 5. Add coconut milk and bring to a boil.
- 6. Reduce heat and simmer for 30 minutes. Stir in spinach at the end.
