🍛 Vietnamese Lentil Curry (Cà Ri Đậu Lăng)

Ingredients
- 150g red lentils
- 400ml Coconut milk
- 2 Carrots
- 1 Onion
- 2 EL Curry paste
- 100g Spinach
Instructions
- 1. Rinse and drain lentils.
- 2. Dice onion and carrots and sauté in a pot.
- 3. Add curry paste and sauté for one minute.
- 4. Add coconut milk and lentils, bring to a boil.
- 5. Reduce heat and simmer for 20-25 minutes until lentils are soft.
- 6. Add fresh spinach and let it wilt briefly, then serve.
