🍛 Vietnamese Lentil Curry (Cà Ri Đậu Lăng)

Ingredients
- 400ml Coconut milk
- 200g Lentils, red or green
- 1 Onion, chopped
- 2 Zehen Garlic, minced
- 2 EL Curry powder
- 100g Carrots, sliced
Instructions
- 1. Heat oil in a large pot and sauté onion and garlic.
- 2. Stir in curry powder and sauté briefly.
- 3. Add lentils and carrots, then pour in coconut milk.
- 4. Bring to a boil and simmer for 25 minutes until lentils are tender.
- 5. Serve with rice.
