🍛 Vietnamese Chicken Curry (Cà Ri Gà)

Ingredients
- 400g Chicken, cut into pieces
- 400ml Coconut milk
- 200g Potatoes, diced
- 100g Carrots, sliced
- 1 Onion, chopped
- 2 EL Curry powder
- 2 EL Oil for frying
Instructions
- 1. Heat oil in a large pot and sauté onions until soft.
- 2. Add chicken pieces and sauté until lightly browned.
- 3. Stir in curry powder and sauté briefly.
- 4. Add potatoes and carrots, then pour in coconut milk.
- 5. Bring to a boil and simmer for 30 minutes until vegetables are tender.
- 6. Serve with rice.
