🍛 Vietnamese Chicken Curry (Cà Ri Gà)

Ingredients
- 300g Chicken breast
- 200ml Coconut milk
- 2 Carrots
- 2 Potatoes
- 1 Onion
- 2 EL Curry paste
Instructions
- 1. Finely chop onion and sauté in a large pot with some oil.
- 2. Cut chicken into bite-sized pieces and add to the onion. Sauté until lightly browned.
- 3. Stir in curry paste and sauté briefly.
- 4. Peel and cube the carrots and potatoes, add to the pot, and pour in coconut milk.
- 5. Bring to a boil and then simmer on low heat until vegetables are tender (about 30 minutes).
- 6. Serve with rice.
