  2. 2. Cut chicken into bite-sized pieces and add to the onion. Sauté until lightly browned.
  3. 3. Stir in curry paste and sauté briefly.
  4. 4. Peel and cube the carrots and potatoes, add to the pot, and pour in coconut milk.
  5. 5. Bring to a boil and then simmer on low heat until vegetables are tender (about 30 minutes).
  6. 6. Serve with rice.
