  1. 1. Rinse the lentils and put them into a large pot.
  2. 2. Peel the pumpkin and cut it into small cubes. Wash and cut the carrot as well.
  3. 3. Fry the finely chopped ginger in the olive oil briefly.
  4. 4. Add the pumpkin, carrot, lentils, tomatoes and broth to the pot.
  5. 5. Season with salt and cumin and bring everything to a boil.
  6. 6. Let the stew simmer for 15 minutes over medium heat until the lentils are soft.
  7. 7. Stir in the coconut milk and serve the dish warm.
