🥣 Red Lentil Pumpkin Stew

Ingredients
- 200 g Red lentils
- 400 g Pumpkin (e.g. Hokkaido)
- 400 g Tomatoes (can)
- 500 ml Vegetable broth
- 100 ml Coconut milk
- 1 Stk Carrot
- 1 Stück (2 cm) Ginger
- 1 EL Olive oil
- 1 TL Salt
- 1 TL Cumin
Instructions
- 1. Rinse the lentils and put them into a large pot.
- 2. Peel the pumpkin and cut it into small cubes. Wash and cut the carrot as well.
- 3. Fry the finely chopped ginger in the olive oil briefly.
- 4. Add the pumpkin, carrot, lentils, tomatoes and broth to the pot.
- 5. Season with salt and cumin and bring everything to a boil.
- 6. Let the stew simmer for 15 minutes over medium heat until the lentils are soft.
- 7. Stir in the coconut milk and serve the dish warm.
