Ingredients
- 1 L vegetable broth
- 150 g rice noodles (Bánh phở)
- 1 carrots
- 1 zucchini
- 1 onion
- 30 g ginger
- 1 EL soy sauce

Instructions
- 1. Bring the vegetable broth to a boil and add ginger, onion, and diced vegetables.
- 2. Prepare the rice noodles according to package instructions.
- 3. Let the broth simmer for 30 minutes to develop flavors.
- 4. Place the rice noodles in bowls.
- 5. Pour hot broth over the noodles and garnish with fresh cilantro and lime.
