🍲 Vegetarian Pho (Phở Chay)

Ingredients
- 1,5L Vegetable broth
- 150g Rice noodles
- 1 Onion
- 1 Stück Ginger
- 2 Star anise
- 100g Shiitake mushrooms
- 1 Bund Fresh coriander
- 100g Bean sprouts
Instructions
- 1. Bring vegetable broth to a boil.
- 2. Toast onion and ginger, then add to broth.
- 3. Add star anise and shiitake mushrooms, simmer for 30 minutes.
- 4. Cook rice noodles according to package instructions.
- 5. Strain broth and season to taste.
- 6. Place noodles in bowls, pour broth over, and garnish with coriander and bean sprouts.
