Ingredients
- 1L vegetable broth
- 150g rice noodles
- 100g mushrooms (e.g. shiitake)
- 1 onion
- 20g ginger
- 10g basil
Instructions
- 1. Heat the vegetable broth.
- 2. Add onion and ginger and simmer for 15 minutes.
- 3. Add mushrooms and simmer for another 10 minutes.
- 4. Cook rice noodles according to package instructions.
- 5. Place noodles in bowls and pour broth over.
- 6. Garnish with fresh basil.
