  1. 1. Slice eggplants and zucchini, salt them, and let sit for 30 minutes.
  2. 2. Finely chop onion and garlic, sauté in olive oil until translucent.
  3. 3. Add canned tomatoes and cinnamon, simmer for 10 minutes.
  4. 4. Pat dry the eggplants and zucchini, and layer them in a baking dish.
  5. 5. Pour the tomato sauce over the vegetables, then spread the cheese on top.
  6. 6. Finish with béchamel sauce and bake in the oven at 180°C for 30 minutes.
