Ingredients
- 2 Eggplants
- 1 zucchini
- 1 Onion
- 2 Garlic cloves
- 400g Canned tomatoes
- 2 EL Olive oil
- 1/2 TL Cinnamon
- 100g Cheese (e.g. Feta)
- 200ml Béchamel sauce
Instructions
- 1. Slice eggplants and zucchini, salt them, and let sit for 30 minutes.
- 2. Finely chop onion and garlic, sauté in olive oil until translucent.
- 3. Add canned tomatoes and cinnamon, simmer for 10 minutes.
- 4. Pat dry the eggplants and zucchini, and layer them in a baking dish.
- 5. Pour the tomato sauce over the vegetables, then spread the cheese on top.
- 6. Finish with béchamel sauce and bake in the oven at 180°C for 30 minutes.
