  1. 1. Preheat the air fryer to 180 °C. This takes about 3 minutes.
  2. 2. Pat the 4 vegetarian sausages dry with paper towels. Wet sausages won’t get crispy.
  3. 3. Lightly brush the 4 sausages with 1 tbsp oil. This helps the spices stick later.
  4. 4. Place the 4 sausages in the air fryer basket. Make sure they don’t touch.
  5. 5. Cook the sausages at 180 °C for 10 minutes. Flip them once after 5 minutes, until golden brown.
  6. 6. Briefly remove the sausages from the air fryer and place them on a plate. They are now par-cooked.
  7. 7. In a small bowl, mix 1 tbsp ketchup with 1 tbsp tomato paste.
  8. 8. Add 1 tbsp curry powder and 1 tsp paprika to the bowl. Stir until smooth.
  9. 9. Balance the sauce with 1 tsp sugar and a pinch of salt. The sugar reduces the acidity.
  10. 10. Cut the 4 par-cooked sausages into equal, bite-sized pieces. A diagonal cut looks nicer.
  11. 11. Toss the sausage pieces in the curry sauce until fully coated. Don’t stir for too long.
  12. 12. Place the coated sausage pieces back into the air fryer basket. Spread them out in a single layer.
  13. 13. Cook everything at 180 °C for 5 minutes. The sauce should thicken slightly and cling.
  14. 14. Remove the currywurst from the air fryer and serve it on two plates. Serve immediately.
