🥗 Vegetarian Cottage Pie

Ingredients
- 500g Potatoes
- 2 Carrots
- 1 Bell pepper
- 1 Onion
- 150g Peas
- 300ml Vegetable stock
- 2 EL Olive oil
- 50g Cheese (optional)
- 1 TL Rosemary
Instructions
- 1. Peel potatoes and cook in salted water until soft.
- 2. Dice onion, carrots, and bell pepper, sauté in olive oil.
- 3. Add peas and vegetable stock, simmer for 10 minutes.
- 4. Mash the cooked potatoes, mixing in cheese if desired.
- 5. Pour the vegetable mixture into a baking dish and cover with the mashed potatoes.
- 6. Bake in the oven at 180°C for 25 minutes until the top is golden brown.
