Ingredients
- 150g Quinoa
- 200g Chickpeas (canned)
- 1 Cucumber
- 1 Tomato
- 1 Onion (red)
- 3 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1/2 Bund Parsley (fresh)
Instructions
- 1. Cook quinoa according to the package instructions.
- 2. Dice cucumber, tomato, and onion.
- 3. Combine cooked quinoa with chickpeas and vegetables.
- 4. Stir in olive oil, lemon juice, and herbs.
- 5. Season with salt and pepper and serve.
