🍲 Vegetable Pho (Phở Rau)

Ingredients
- 1,5L Vegetable broth
- 150g Rice noodles
- 1 Zucchini
- 1 Bell pepper
- 2 Carrots
- 1 Bund Fresh coriander
- 1 Lime
- 2 Star anise
Instructions
- 1. Bring vegetable broth to a boil.
- 2. Chop zucchini, bell pepper, and carrots, and add to broth.
- 3. Add star anise and simmer for 20-25 minutes.
- 4. Cook rice noodles according to package instructions.
- 5. Strain broth and season to taste.
- 6. Place noodles in bowls, pour broth over, and garnish with coriander and lime.
