🍽️ Vegan Airfryer Potato Skillet

Ingredients
- 400g Potatoes
- 1 Onions
- 2 Garlic cloves
- 1 Bell peppers
- 200g Chickpeas
- 2 EL Olive oil
- 1 TL Salt
- 1 TL Pepper
- 1 TL Thyme
- 1 EL Sesame
Instructions
- 1. Wash the 400 g potatoes thoroughly under running water.
- 2. Cut the peeled potatoes into roughly 2 cm cubes.
- 3. Peel the onion and dice it finely.
- 4. Peel the 2 garlic cloves and chop them finely.
- 5. Core the bell pepper and cut it into roughly 1 cm wide strips.
- 6. Put the potato cubes into a large bowl.
- 7. Add the diced onion, garlic, and bell pepper strips to the bowl.
- 8. Add the 200 g chickpeas (drained) to the bowl.
- 9. Add 2 tbsp olive oil, 1 tsp salt, 1 tsp pepper, and 1 tsp thyme.
- 10. Mix everything with your hands until evenly coated.
- 11. Preheat the air fryer to 200 °C until it beeps.
- 12. Put the mixture into the air fryer basket and sprinkle with 1 tbsp sesame seeds.
- 13. Cook the mixture in the air fryer for about 20 minutes at 200 °C, shaking the basket every 5 minutes, until the potatoes are golden brown.
- 14. Take the basket out and check: the potatoes should be golden brown at the edges.
- 15. Let the mixture sit in the basket for 2 minutes so the sesame seeds stick.
- 16. Serve the mixture directly from the basket while it’s crispy and hot.
