1. Wash the eggplants and cut them in half lengthwise. Use a spoon to scoop out the flesh from the middle and chop it into small cubes.
2. Finely chop the onion and garlic cloves. Heat the olive oil in a pan and sauté the onions and garlic until they are translucent.
3. Add the eggplant cubes, tomato paste, quinoa, paprika powder, salt, and pepper to the pan and mix well. Cook over medium heat for 5 minutes.
4. Place the eggplant halves, skin side down, in the Airfryer and cook at 180°C for 10 minutes until they are soft.
5. Spread the quinoa filling on the eggplant halves and roll them into rolls. Place the rolls, skin side down, in the Airfryer and cook at 180°C for 5 minutes until they are lightly browned.
6. Remove the rolls from the Airfryer and serve on plates. Garnish with fresh basil and serve.
