  3. 3. Cook the rice over medium heat, stirring regularly for about 20 minutes until tender.
  4. 4. Remove the pot from the heat and stir in the lemon juice.
  5. 5. Whip the cream until stiff and gently fold it into the rice pudding.
  6. 6. Distribute the pudding into four glasses and refrigerate for 30 minutes.
