  1. 1. Rinse the gelatin leaves under cold water and place them in a bowl of cold water to soften. Gently squeeze them shortly before use.
  2. 2. Warm 100 ml of the cream in a small saucepan over medium heat until it almost boils. Remove the saucepan from the heat.
  3. 3. Stir the squeezed gelatin into the warm cream until fully dissolved. Add the remaining 400 ml cold cream, sugar, and vanilla extract, and stir well.
  4. 4. Pour the mixture into 4 small molds or glasses and place them in the refrigerator for at least 4 hours until set.
  5. 5. For the compote, place berries and 20 g sugar in a small saucepan. Warm over medium heat and simmer for 5 minutes until the berries are soft.
  6. 6. Carefully unmold the set panna cotta from the molds or serve it directly in the glass with the warm berry compote.
