🍮 Vanilla Panna Cotta with Berry Compote

Ingredients
- 500 ml heavy cream
- 50 g sugar
- 1 TL vanilla extract
- 3 g gelatin leaves
- 100 ml water (for soaking)
- 200 g mixed berries (frozen or fresh)
- 20 g sugar (for compote)
Instructions
- 1. Rinse the gelatin leaves under cold water and place them in a bowl of cold water to soften. Gently squeeze them shortly before use.
- 2. Warm 100 ml of the cream in a small saucepan over medium heat until it almost boils. Remove the saucepan from the heat.
- 3. Stir the squeezed gelatin into the warm cream until fully dissolved. Add the remaining 400 ml cold cream, sugar, and vanilla extract, and stir well.
- 4. Pour the mixture into 4 small molds or glasses and place them in the refrigerator for at least 4 hours until set.
- 5. For the compote, place berries and 20 g sugar in a small saucepan. Warm over medium heat and simmer for 5 minutes until the berries are soft.
- 6. Carefully unmold the set panna cotta from the molds or serve it directly in the glass with the warm berry compote.
