🥞 Vanilla Cream Stuffed Crepes

Ingredients
- 125 g All-purpose flour
- 2 Stk Eggs
- 250 ml Whole milk
- 15 g Butter (for greasing pan)
- 200 ml Heavy cream
- 30 g Powdered sugar
- 1 TL Vanilla extract
- 200 g Cherries (canned/jarred)
Instructions
- 1. Whisk the flour with one egg and a splash of milk in a bowl.
- 2. Add the remaining milk and the second egg, whisking until the batter is smooth and lump-free.
- 3. Whip the cream with the powdered sugar and vanilla until stiff peaks form.
- 4. Heat a non-stick pan slightly and grease it with a cloth dipped in melted butter.
- 5. Pour a small ladle of batter into the pan and swirl it to cover the bottom.
- 6. Flip the crepe after about two minutes when the edges turn slightly brown, and cook the other side for one minute.
- 7. Repeat this with the remaining batter until you have four finished crepes.
- 8. Place the cherries on a crepe, add a large spoonful of cream, and roll up the crepe.
- 9. Serve the filled crepes warm with an extra spoonful of cream on the side.
